2 Tb. olive oil
1 onion, minced
4-6 cloves garlic, crushed
1 14 oz jar artichoke hearts ~ drained, trimmed, and chopped
1/4 c. dry Italian bread crumbs
1/2 lb. Swiss or sharp Cheddar cheese
1/4 cup Parmesan cheese, shredded
2 tsp. dry or 2 Tb. fresh minced parsley
1/4 tsp. oregano
1/2 tsp. salt
1/8 tsp freshly ground pepper to taste
1. Heat oil in skillet, and saute onion and garlic until soft and translucent but not brown.
2. Beat eggs in bowl; add chopped artichoke hearts. Stir in rest of ingredients.
3. Pour into 7 x 11 baking dish. Bake 25-30 min. at 325 degrees F or until set. Let cool before cutting into squares. You can put a toothpick in each one if you like.
