Gingerbread Pancakes

2 eggs
1/2 cup buttermilk or yogurt
1/4 cup brown sugar
1/2 cup water
1 TBS lemon juice
1TBS vanilla
1/2 cup coffee

blend the above ingredients, then add:
1 tsp nutmeg
1 tsp ginger
1 tsp cinnamon
1/4 tsp cloves
1 1/2 tsp baking powder
1 tsp baking soda
2 cups flour

1. Add the first 7 ingredients into a blender and whir it for 30 seconds. Add remaining ingredients (spices, sodas and flour) blending one at a time. Try not to blend too much.
2. Heat a non-stick pan or griddle on medium-high heat. Add a bit of butter and oil to the hot pan. When it bubbles drop batter onto pan or griddle, making a large thin pancake. Cook until bubbles form and the pancakes begin to brown. Turn and repeat (about 2 minutes on each side).
3. Serve with cloved maple syrup and barely sweetened home made whip cream mmmm. For fun, cook these into gingerbread shapes for the kids then let them decorate with fruit, raisins etc.
