Swedish Pancakes

Ingredients:
For each serving add:
1 egg
1 cup milk
1 tsp vanilla
1/2 tsp lemon juice
1 TBS vegetable oil or melted butter
2/3 cup flour
1 TBS sugar

Directions:
1. Add the egg into a blender and whir it for 30 seconds. Add remaining ingredients and blend just until uniform and moistened.
2. Heat a non-stick pan or griddle on medium-high heat. Add a bit of butter and oil to the hot pan. When it bubbles drop batter onto pan or griddle, making a large thin pancake. Cook until bubbles form and the pancakes begin to brown. Turn and repeat (about 1 minutes on each side).
3. Serve with a bit of lemon juice and powdered sugar; or fresh strawberries or other fruit. Also wonderful with the Berry Coulis that is served with the Oatmeal Raspberry Pancakes. If you can find them, replace the blueberries and raspberries with lingonberries when making the coulis.
