Yoghurt Pancakes

2 cups all-purpose flour
4 TBS sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 cups milk
1 TBS vanilla
1 tsp lemon juice
2 eggs, beaten
1/4 cup butter, melted and cooled
1 cup plain lowfat yogurt

1. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
2. Whisk in the milk, vanilla, lemon juice, eggs and melted butter. Stir in the yogurt just until blended.
3. Heat a non-stick pan or griddle on medium-high heat. Add a bit of butter and oil to the hot pan. When it bubbles drop batter onto pan or griddle. Cook until bubbles form and the pancakes begin to brown. Turn and repeat (about 2 minutes on each side). Makes about 20 pancakes.
