Soft Pretzels

3 pkg. yeast
3 3/4 cup warm water
3 pinches sugar
6 tsp. kosher (coarse) salt
12-15 cups flour
4 cups water
4 tsp. baking soda

1. Knead 10 minutes. Place in greased bowl and let rise until it doubles.
2. Make ropes 18 inches long and twist into pretzle shape.
3. Boil 4 cups water and 4 tsp. baking soda. Drop 3 pretzels in and boil 1 minute or until they float. Remove, drain, and place on cookie sheet. Sprinkle with coarse salt.
4. Bake in a pre-heated 475 degrees oven for 12 minutes. Serve warm with mustard or soft sharp cheddar cheese if desired.
Can be frozen. Thaw, then reheat when room temp at 200 degrees for a few minutes, or frozen at 350 degrees for 5 minutes.
