Zucchini Bread

1 stick of butter, softened (8 oz)
1 cup sugar
2 eggs
1 3/4 cups flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon (optional)
1/8 tsp nutmeg (optional)
1 cup unpeeled zucchini, grated
1/2 cup chopped pecans or walnuts (optional)
1 TBS vanilla

1. Pre-heat oven to 350 degrees
2. Grease 9x5x3 loaf pan
3. In a large bowl, cream the butter and sugar with a mixer 4. Beat in the eggs
5. Combine the flour, salt, soda and spices
6. Stir half if the flour mixture into the batter
7. Add the zucchini then stir in the rest of the flour mixture; blend well
8. Stir in nuts and vanilla
9. Bake 50 to 60 minutesl remove from pan and cool on rack
