Rocky Road Cola Bars
1 cup (1/2 pound) butter, cut into small pieces
1 cup cola
2 cups flour
2 cups sugar
4 TBS unsweetened cocoa powder
1/2 tsp salt ( 1/4 if using salted butter)
2 large eggs
1/2 cup buttermilk
1 tsp baking soda
1 TBS vanilla
Rocky Road Frosting:
1/2 cup (1/4 pound) butter
1/3 cup cola
1 tsp instant coffee granules
1 pound powdered sugar, sifted
5 TBS unsweetened cocoa powder
1 cup chopped nuts (walnuts, roasted almonds, pecans)
1 1/2 cups miniature marshmallows
1. In a large glass bowl, microwave butter and cola until butter is melted. Stir in flour, sugar, cocoa, and salt. Whisk in eggs, buttermilk, baking soda and vanilla.
2. Pour mixture into a buttered 9x13 baking pan. Bake in a 350 degree oven for 30 minutes, or until an inserted toothpick comes out clean from the center.
3. As cake cooks, make the frosting: Bring butter, cola, coffee, and 2 TBS water to a boil on the stovetop. Stir in powdered sugar and cocoa until well blended. Fold in nuts and marshmallows.
4. Remove cake from oven and immediately pour frosting over the top, spreading to cover. Cool and cut into 1 1/2 squares and serve.
