Bellinis

Ingredients:
4-6 fresh peaches, peeled and diced (or eqivalent of frozen but do not use canned)
ice
sugar (amount depends on tartness of the peaches and personal preference)

Alcoholic version:
Peach Schnappes
Champagne

Non-alcoholic version:
water, peach juice, or OJ
Ginger Ale

Directions:
Non-Alcoholic Version:
1. Blend peaches, sugar (begin with a small amount such as 1/8 cup, you can add more later after taste testing) and 1/2 cup of water, peach juice, or OJ to form a liquid "base". You want to add enough liquid to where the blades will move in the blender.
2. Slowly add ice (1-2 cups) to form a thick slush. Add more juice if necessary to keep the blades moving.
3. Add 1 can of Ginger Ale to the slush and blend for 2-3 seconds. Taste and add more sugar if necessary. It should be fizzy and slightly sweet tart. Serve immediately.

Alcoholic Version:
1. Blend peaches, sugar (begin with a small amount such as 1/8 cup, you can add more later after taste testing) and Peach Schnappes (1-2 shots) to form a liquid "base". You want to add enough liquid to where the blades will move in the blender.
2. Slowly add ice (1-2 cups) to form a thick slush. Add water if necessary to keep the blades moving.
3. Add Champagne, 4 ounces at a time until you have your desired consitency and taste, blending for 2-3 seconds at a time and tasting. Add more sugar if desired. It should be fizzy and slightly sweet tart. Serve immediately.
