2 cups light Rum
1 cup mint syrup (recipe follows you will need 1 1/2 cups mint and 1 cup sugar)
1 cup lime juice
2 cups ice cubes
1-3 cups club soda (less for a stronger drink)
fresh mint leaves for a garnish

1. Make the mint syrup:
combine 1 1/2 cups fresh mint leaves, 1 cup sugar and 1 cup water in a pan. Stir over medium heat until sugar is dissolved and syrup is simmering. Turn off heat, cover, and let stand for one hour. Strain the mint leaves and discard them.

2. Mix all ingredients; if mixture is too strong you can add more club soda and sugar to taste (dissolve the sugar in a bit of hot water before adding).
3. Serve in tall glasses topped with mint sprigs.
