Suzy's Dirty Rice

Ingredients:
Butter
2 cloves fresh garlic, crushed
3 stalks of celery, diced into small bits
1 green pepper, diced into small bits
1 small white onion, diced into small bits
1 12 oz. package of Hot Jimmy Dean sauage or equivalent
1/4 cup chopped fresh parsley, chopped into small bits
3 green onions, diced into small bits
2 cups enriched long grain white rice (get the most $$ it makes a difference)
4 cups low sodium chicken broth

spices:
1/2 tsp Lawrys seasoning salt or Cajun Spice blend
2 bay leaves (keep whole to pick out)
1/4 tsp thyme
1/4 tsp cayenne pepper
salt
black pepper
Frank's Red Hot Sauce

Directions:
1. Melt butter with oil in a frying pan. Saute 2 bay leaves, spices (do the cayenne to taste depending on how spicy you want it), onion, garlic, celery, and bell pepper for five minutes. Add the sauage and crumble it while you sautee it until nice and brown. Cover and keep it on low while you prepare the rice. 5 minutes before the rice is done, add the parsley and green onions.
2. Rinse the rice until the water runs clear and place in a soup pan. Add the chicken broth and bring to a boil, then simmer for 20 minutes. Do not overcook or stir, or the rice will get mushy!
3. Add sauage mixture carefully, stirring gently to prevent mushiness, and continue cooking until flavors blend. Add 1/4 to 1 tsp Frank's Hot Sauce for some nice heat and flavor. Garnish with chopped parsley and serve hot.
