Ingredients (recipe can be halved):
Sauce mixture:
1 medium onion, chopped
4-6 cloves garlic, crushed
1 large can diced tomatoes with juices
olive oil
salt and black pepper to taste
1/2 cup minced parseley (or 1 tsp dried)
1/2 tsp Italian Seasoning herbs (Marjoram, Oregano, Tyme)
1/2 tsp seasoned salt
1 tsp Worceschestire sauce
1/3 cup ketchup
1 TBS mustard

Meat mixture:
2 pounds lean ground turkey or beef
1 cup dry oatmeal
1/3 cup Italian bread seasoning crumbs or crumbled crackers
1 TBS mustard
2 eggs

1. Sautee the onions and garlic in olive oil until onions are translucent.
2. Add the can of tomatoes and continue to sautee on medium heat.
3. Add spices. Cook for 20 minutes then turn off and allow to cool.
2. Mix together the meat ingredients in a large bowl, add the cooled sauce mixture and mix with hands.
3. Mold into desired shape (mini mounds, pan etc) and make a "well" with spoon in the center of the meatloaf and add a bit of olive oil and top with ketchup.
4. Bake in a pre-heated 375 degree oven for 45 minutes, or until all browned and cooked through.
5. Serve with mashed potatoes and veggies :)
