Porcupine Balls

Ingredients:
1 pound hamburger
1 small white onion, diced
1 egg
2 cloves garlic, crushed (or substitute garlic powder for milder flavor)
1/8 cup cream
1/4 cup unccoked long grain white rice
butter
1 cup beef broth
1 can Cambell's Cream of Mushroom soup
salt and pepper, to taste

Directions:
1. Make the meatballs by mixing hamburger, onion, garlic, salt, pepper, cream, rice and egg in a bowl. 2. Melt 1 TBS butter in a pan and lightly brown the meatballs on all sides.
3. Add the can of soup and broth to the meatballs, making sure that they are covered with liquid (add more broth if necessary). Simmer on low heat for 1 hour or until rice is cooked in the meatballs. Serve with mashed potatoes.

Variation: Instead of the soup can, stir 3 TBS flour into 1/2 - 2 cups beef broth and make a brown gravy. I add spices like poultry seasoning, garlic and onion powder, and salt and pepper to the gravy when I do this.
