Thai Beef Noodle Salad

2 oz. Asian noodles
1 pound beef steak
2 carrots, thinly sliced diagonally
1 large cucumber, peeled and thinly sliced,
1/2 cup thinly sliced onion
3 TBS thinly sliced green onion, white and dark tops
1/4 cup sliced fresh mint leaves
4 TBS lime juice
2 TBS fish sauce or soy sauce
2 tsp sugar
salt to taste

1. Spray the rack of the oven with Pam. Pre-heat to broil
2. Broil steak 4 inches from heat 3 minutes on each side. Remove and let stand 5 minutes, then slice thinly.
3. Boil noodles according to directions
4. Combine noodles, steak, carrots, cucumber, onions, mint, lime juice, fish sauce, sugar in a large bowl. Add more soy sauce to taste. Serve.
