Dad's Salsa Ranchera

Ingredients:
2.5 pounds ripe Roma tomatoes, diced (First blanch tomatoes in hot water for a minute to peel the skin and core the green kaka stuff out)
2 cups yellow onions, diced
4 cloves of garlic, chopped
1 cup green bell peppers, diced
1/4 ~ ½ cup green hot peppers, chopped (any green pepper will do; jalapeno is hotter than serrano)
1 cup cilantro, chopped
1/4 ~ ½ cup white vinegar (to taste)
1 - 2 tablespoon salt (to taste)
2 tablespoon tomato paste

Directions:
1. Use more or less vinegar, salt, and hot peppers according to your taste. Place all ingredients in a large skillet or a pot at once and bring to boil for two minutes, then lower heat to simmer for 15 minutes or more, stirring often.

Note:This recipe is canned by cutting a little time on simmering and hot water bathing instead for 15-20 minutes in glass jars.
