Ginger Salad Dressing

Ingredients:
1/4 c onion ~ chopped fine
1/4 c soybean or peanut oil (may substitute any oil)
2 tb white wine vinegar
2 tb water
1 tb fresh ginger root ~ minced fine
1 tb celery; chopped
1 tb soy sauce;
1 1/2 ts tomato paste
1 1/2 ts sugar
1 ts lemon juice
salt and freshly ground pepper to taste

Directions:
Combine all ingredients in an blender for 3 to 5 seconds, until celery is finely grated. Chill and serve over salad. This is the dressing they serve at Benihana Japanese Restaurants.
