Fresh Tomato Vinagrette

1 cup plum tomatoes, diced and divided in half
1 clove garlic, minced
1/2 onion, minced
2 tablespoons fresh parsley, chopped (or 1/2 tsp dried)
2 tablespoons fresh basil, chopped (or 1/2 tsp dried)
1/3 c olive oil
1/4 c red wine vinegar
1 TBS Lemon juice or Basalmic vinegar
1 teaspoon Dijon Mustard
salt and ground pepper to taste

1. Put all ingredients in a blender except for the tomatoes and blend. This mixture needs more salt than you would normally add to bring out the flavor of the tomatoes. I add a lot of pepper too.
2. Put the tomatoes into the blender and whir for 1-2 seconds. You want the tomatoes to remain chunky so be careful.
3. Serve on salad and tightly seal the remainder in a jar.
