Spinach Tortellini Soup

2 cups fresh julienned or one 10 ounce package frozen chopped spinach
2 (14.5 ounce) cans chicken broth
1 (9 ounce) package cheese tortellini
1/4 cup fresh chopped or 1/4 tablespoon dried basil
2 cloves fresh crushed or 1/4 tablespoon garlic powder
salt and pepper to taste
freshly grated parmesan for serving

1. Pour a bit of olive oil into a large pot and put the heat on medium high. When the oil is hot add the crushed garlic and sautee until it is a very light brown.
2. Add the chicken broth to the pot and bring it to boiling, then reduce heat to low.
3. Stir in tortellini, and simmer for 10 to 15 minutes, or until the tortellini is cooked to desired tenderness.
4. Add the spinach, basil, salt, and pepper. Simmer for 5 minutes and serve with the parmesan cheese. Mmmmm :)
