Candied Yams

2 large yams or sweet potatoes
4 TBS butter
1/4 cup brown sugar
1/2 tsp cinnamon
1/2 tsp vanilla
1/4 cup orange juice
1/4 cup crushed pecans
1/2 cup marshmallows

1. Preheat oven to 350. Wash yam or sweet potato and wrap in foil. Cook until firm but tender (they will cook more later - you want them very firm to hold shape when cooked in pan). Let cool.
2. Cut yam into chunks and sautee in a frying pan in butter until browned.
3. Add all ingredients except marshmallows and pecans and cook until liquids are carmelized.
4. Pour into a buttered baking dish. Top with pecans. When ready to serve, top with marshmallows and cook at 375 until heated through and marshmallows are browned.
